Noodle Bowl with Falafel
The Noodle Bowl with Falafel from Spoonsparrow will definitely impress Clean-Eating fans!
Ingredients
- 200 g dried chickpeas
- 0.5 Red Onion
- 2 Garlic cloves
- 20 g Coriander (1 bunch)
- 20 g Parsley (1 bunch)
- 1 small chili pepper
- 1 lemon
- 1 tbsp Ground cumin
- 100 g chickpea flour
- Salt
- 3 tbsp olive oil
- 200 g whole‑grain spaghetti
- 600 g sweet potatoes (2 sweet potatoes)
- Pepper
- 80 g Arugula (1 bunch)
- 10 g mint
- 0.5 bunch radishes
- 2 Spring Onions
- 1 Lime
- 2 tbsp sesame oil
Instructions

Cover the chickpeas with water and soak for 12 hours, preferably overnight. Drain and rinse the next day. Place in a pot, cover with water, bring to a boil, then simmer for 20 minutes over medium heat. Drain and let cool.

Meanwhile, peel and roughly chop half of the red onion; peel one garlic clove and set aside. Wash coriander, shake dry, and pluck the leaves. Wash parsley, shake dry, pluck the leaves, and set aside half. Halve the chili pepper lengthwise, remove seeds, and rinse. Squeeze the lemon. Blend everything with cumin and chickpea flour until smooth. Season with salt.

Form 12–16 balls from the mixture. Heat 1 tbsp olive oil in a large pan. Brown the balls for about 10 minutes over medium heat on all sides.

While the balls cook, boil spaghetti in salted water according to package instructions. Peel sweet potatoes and shave into thin ribbons with a vegetable peeler. Heat 1 tbsp olive oil in a pan and sauté the potato ribbons for 3 minutes over medium heat.

Drain the spaghetti, let it dry, then add it to the pan with the sweet potato ribbons for 3 minutes. Season with salt and pepper. Wash and shake dry arugula and mint. Clean radishes, rinse, and slice thinly. Trim spring onions, wash, and chop finely. Finely mince the remaining garlic. Squeeze lime juice. Mix garlic, lime juice, and sesame oil; season with salt and pepper.

Combine arugula, mint, remaining parsley, radishes, and spring onions in a bowl and drizzle with the dressing. Serve the spaghetti and vegetable noodles in bowls topped with the salad and falafel balls.
