Tomato Salad with Coriander

The tomato salad with coriander from Spoonsparrow is ready in no time and makes the perfect side dish for summer.

Ingredients

  • 1 Red Onion
  • 1 kg mixed meat tomatoes (red, yellow, and green varieties)
  • 0.5 bunch coriander (10 g)
  • 1 Handful Parsley (5 g)
  • 2 tbsp white balsamic vinegar
  • Salt
  • Pepper
  • 6 tbsp Olive oil
  • 4 tbsp pomegranate seeds (15 g)

Instructions

    Peel the onion and slice it into thin rings. Clean, wash, trim stems from the tomatoes and slice them into rounds. Mix both together in a bowl.

    Wash coriander and parsley, pat dry, pluck leaves and chop. Whisk vinegar, salt, pepper, and oil to make a dressing and pour over the tomatoes. Sprinkle tomato salad with coriander, parsley, and pomegranate seeds.
