Apple Herring Salad

Ingredients
- 2 Eggs
- 0.5 lemon (unprocessed)
- 6 pickled herring fillets (Bismarck herrings)
- 1 Red Onion
- 1 tart apple
- 150 g Sour cream
- 100 g plain yogurt
- 2 tsp horseradish
- 3 tbsp white wine vinegar
- 2 tbsp sunflower oil
- Salt
- Pepper (freshly ground)
- 2 sprigs dill
Instructions

Hard boil the eggs; cool them under running water and let them rest. Juice the lemon.

Drain the herring fillets and cut into bite‑size pieces.

Peel the onion and slice it thinly into rings.

Wash the apple, quarter it, remove the core, slice crosswise into rounds and drizzle with a little lemon juice.

For the dressing whisk sour cream with yogurt, horseradish, vinegar and oil; season with salt, pepper and a splash of lemon juice.

Finely chop dill and fold it in.

Combine all salad ingredients except the eggs with the sauce, cover and chill for 2–3 hours to allow flavors to meld.

Before serving peel the eggs, cut them into wedges and arrange on plates alongside the salad.
