Colorful Cheese Salad

A light and fresh treat on warm days is a colorful salad with cheese by Spoonsparrow
Ingredients
- 200 g corn kernels (canned)
- 2 tbsp balsamic vinegar
- 4 tbsp olive oil
- juice of one lime
- 4 small tomatoes
- 1 onion
- Salt
- freshly ground pepper
- 250 g semi-hard sliced cheese (e.g., Trappist cheese)
- 2 bunches arugula
- 1 handful spinach leaves
Instructions

Drain the corn.

Wash the tomatoes and slice them.

Peel the onion, quarter it lengthwise, then cut into thin strips.

Wash, dry, and pat the spinach and arugula.

Arrange spinach on a plate, add arugula, corn, tomatoes, and onion strips, and serve with cheese.

Mix oil, vinegar, and lime juice; season with salt and pepper. Drizzle the dressing over the salad.
