Cauliflower Casserole Low Carb

Looking for a light dinner? This low‑carb cauliflower casserole is perfect.
Ingredients
- 1 medium cauliflower
- 1 lemon
- 1 red bell pepper
- 2 Tomatoes
- 100 g smoked bacon (sliced)
- Salt
- Pepper (freshly ground)
- nutmeg
- 100 g Emmental cheese (grated)
- 100 g whipping cream
- butter (for the dish)
Instructions

Break the cauliflower into florets.

Bring salted water to a boil, add sliced lemon and blanch the cauliflower for about 8 minutes; strain and shock in ice water, then drain. (Lemon brightens flavor and color.)

Wash tomatoes and quarter them.

Wash pepper, trim, halve, seed, and slice into strips.

Slice bacon into strips.

Whisk cream with one‑third of grated cheese, nutmeg, salt, and pepper.

Place cauliflower in a buttered baking dish; top with pepper, tomatoes, and bacon. Pour the cheese‑cream mixture over it and sprinkle remaining cheese on top.

Bake at 180 °C (356 °F) on the middle rack for about 25 minutes until the cheese is melted and lightly browned.
