Spaghetti with Green Pesto

Ingredients
- 500 g spaghetti
- Salt
- 60 g pine nuts
- 40 g basil
- 2 Garlic cloves
- 60 g grated pecorino cheese
- 150 ml olive oil
- 50 g freshly grated Parmesan cheese
- black pepper (ground)

Cook the spaghetti in plenty of salted water until al dente.

Roast the pine nuts without fat in a pan, then let them cool. Wash and dry the basil, shake off excess moisture, and remove the leaves. Set aside some for garnish. Peel the garlic and blend it with basil, pine nuts, pecorino, a little oil, and salt using an immersion blender. While blending, pour the olive oil in a thin stream until a creamy pesto forms. Season with salt.

Drain the pasta and let it dry well. Plate the noodles, place a spoonful of pesto in the center of each plate, sprinkle with parmesan and pepper, and garnish with basil leaves before serving.
