Ingredients

  • 600 g dark chocolate
  • 150 g coconut oil
  • 200 ml whipping cream
  • 150 g chopped almonds
  • 300 g butter cookies
  • 1 tbsp chopped pistachios

Instructions

    Coarsely chop the chocolate and melt it with the coconut oil and cream over a double boiler, stirring constantly. Remove from heat, fold in all but 2 tbsp of the almonds, and let cool slightly. Line a loaf pan with plastic wrap, spoon some chocolate mixture into the pan, top with cookies, and repeat until all ingredients are layered and used up. Finish with a layer of chocolate mixture and smooth it out. Chill for at least 5 hours, preferably overnight.

    Before serving, remove from the pan, peel off the plastic wrap, sprinkle with remaining almonds and pistachios, and cut into slices.
