Cold Cucumber Soup

Ingredients

  • 1 salad cucumber
  • 2 Garlic cloves
  • 1 handful dill
  • 700 g yogurt
  • 150 ml milk
  • 2 tbsp olive oil
  • 3 tbsp Lemon juice
  • Salt
  • Pepper
  • 40 g walnut kernels
  • mint (for garnish)

Instructions

    Wash, peel, cut off one-third of the cucumber and roughly chop it. Slice the remaining cucumber into thin sticks. Peel the garlic cloves. Rinse the dill and shake dry. Pick out stems and finely chop.

    Blend the cucumber quarter and garlic with yogurt and milk. Mix in olive oil and lemon juice. Stir in cucumber sticks and dill, season with salt and pepper. Chill the soup for about 1 hour.

    Before serving, roughly chop walnuts and sprinkle over the soup. Garnish with mint and serve.
