Ingredients

  • 1 Vanilla bean
  • 400 g heavy cream
  • 100 ml strong coffee
  • 60 g sugar
  • 6 sheets white gelatin
  • 4 tbsp caramelized peanuts

    Slash the vanilla bean lengthwise. Pour the cream with sugar and vanilla into a saucepan and simmer over medium heat for about 8 minutes, then set aside. Add hot coffee.

    Meanwhile, soak the gelatin in cold water. Remove the vanilla bean from the coffee-cream mixture. Squeeze out the gelatin sheets with your hands, add them to the warm, no longer boiling vanilla cream, and stir until dissolved. Pour the vanilla cream into four small molds (100 ml each), chill, and let the coffee panna cotta set for 6 hours.
