Cream Pudding with Currant Sauce

- 1 vanilla pod
- 500 ml whipping cream
- 50 g sugar
- 5 sheets white gelatin
- 250 g currants
- 20 ml Cassis
- 1 tsp powdered sugar

Slice the vanilla pod lengthwise and bring the cream and sugar to a boil. Set aside and let steep for about 10 minutes. Soak the gelatin in cold water in a bowl. Strain the vanilla cream through a sieve. Squeeze out excess liquid from the gelatin and add it to the vanilla cream, stirring until dissolved. Rinse 4 molds or glasses with cold water, fill with the cream, cool, and chill for at least 4 hours in the refrigerator until set.

Before serving wash, peel, and drain the currants. Puree finely and strain through a sieve. Mix with the liqueur, powdered sugar, and mint, then spoon over the panna cotta.
