Panna cotta with cherries

Ingredients
- 150 g sweet cherries
- 1 tbsp Lemon Juice
- 3 tbsp sugar
- 200 ml cherry juice
- 1 tbsp Cornstarch
- 4 sheets white gelatin
- 0.5 Vanilla pod
- 3 tbsp sugar
- 300 ml whipping cream
- 40 ml cherry syrup
- 2 tbsp sugar
- cherry sauce (pre-made)

Wash the cherries, set aside 8 pieces, pit and halve the remaining ones.

Bring lemon juice with sugar and cherry juice to a boil, then thicken with cold-water mixed cornstarch. Stir for several minutes until thickened, remove from heat, stir in cherries, and pour into four chilled glasses or molds. Refrigerate for 2 hours.

Soak gelatin in cold water during this time.

Split the vanilla pod lengthwise, scrape out the seeds, and combine with sugar and cream in a pot; bring to a boil. Squeeze out excess water from gelatin, dissolve it in hot cream, remove from heat, let cool slightly. Once the cream starts to set, whisk vigorously with a hand whisk and spread over the cherry mixture. Refrigerate for another 3 hours.

Dip the reserved cherries first in syrup then in sugar.

Serve the dessert on plates, garnish with cherries and cherry sauce, and serve immediately.
