Ingredients

  • 240 g butter
  • 240 g sugar
  • 4 eggs
  • a pinch of salt
  • 350 g flour
  • 100 g Ground Almonds
  • 1 packet baking powder
  • 220 ml milk
  • 250 g white chocolate
  • 1.5 tbsp instant espresso
  • 125 ml whipping cream
  • 3 tbsp Coffee Liqueur
  • 140 g cherry jam
  • coffee beans for garnish

Instructions

    Preheat the oven to 180°C (350°F) with top and bottom heat.

    Cream the butter with sugar, then gradually fold in eggs and a pinch of salt. Mix flour with baking powder and nuts; alternately stir into the butter mixture with milk. Spread dough evenly on parchment-lined springform pan and bake for about 45 minutes, checking with a toothpick.

    Remove the finished cake from oven, let cool, release from pan, and allow to cool completely. Then cut horizontally twice.

    For the coffee cream, chop chocolate. Dissolve espresso powder in cream, bring to boil, pour over chocolate and stir until melted. Add liqueur, let slightly cool, then whip briefly with mixer.

    Place one cake layer on a plate, spread some coffee cream. Top with second layer, spread jam. Cover with last layer and lightly spread remaining cream. Garnish with coffee beans and refrigerate for 1.5 hours before slicing and serving.
