Ingredients

  • 1 small zucchini
  • 1 green bell pepper
  • 2 Tomatoes
  • 4 cod fillets (about 180 g each)
  • Salt
  • Pepper (freshly ground)
  • 1 tbsp Lemon Juice
  • 1 clove garlic
  • 4 tbsp olive oil
  • 2 tbsp freshly chopped herbs (e.g., rosemary and thyme)

Instructions

    Preheat the oven to 200°C fan-forced.

    Wash the zucchini, trim the ends, and slice into ~2 cm thick diagonal slices. Wash the bell pepper, halve it, remove seeds and white membranes, and cut into strips. Wash the tomatoes, remove the stem end, and slice them.

    Rinse the fish, pat dry, season with salt and pepper, and drizzle with lemon juice.

    Press the garlic through a press into a small bowl and mix with olive oil and chopped herbs.

    Lay four rectangular sheets of parchment paper side by side, spoon some herb‑oil mixture onto each. Arrange the cod and vegetables on top, drizzle again with more mixture. Fold the parchment over and seal the edges well. Place on a baking tray and steam in the oven for 15–20 minutes.
