Ingredients
- 2 large veal cutlets (about 140 g)
- 40 g sun‑dried tomatoes in oil
- 1 bunch coriander leaves
- 2 Spring Onions
- Sea salt
- freshly ground pepper
- olive oil
Instructions

Flatten the cutlets with a mallet.

Finely chop the tomatoes. Roughly chop the coriander, leaving some whole leaves for garnish.

Wash and trim the spring onions, then slice them into very thin diagonal rings.

Combine tomatoes, coriander and spring onions (except 1 tablespoon) and spread over the cutlets. Season with salt and pepper, drizzle with olive oil. Roll up and secure with toothpicks. Season the outside as well and cook in hot olive oil, turning occasionally, for about 8 minutes until golden brown. Remove, let rest briefly, then remove toothpicks. Sprinkle with remaining coriander and spring onions before serving.
