Cod on Sauerkraut

Ingredients
- 650 g cod fillet
- 2 lemon juice
- 550 g sauerkraut (canned)
- 2 onions
- 1 EL clarified butter
- 4 juniper berries
- 150 g crème fraîche
- 0.5 bunch Parsley
- Salt
- Pepper
Instructions

Wash the fish, pat dry and cut into long fillets, removing any bones. Drizzle with lemon juice and season with salt.

Peel the onions, halve them, slice into rings and sauté in clarified butter until translucent. Transfer to a greased baking dish.

Spread sauerkraut over the onions and season with salt, pepper, and juniper berries. Arrange the fish on top of the sauerkraut and spread crème fraîche over it.

Cover with foil and bake at 180 °C for 15 minutes; remove the foil and bake for an additional 10 minutes until golden. Sprinkle chopped parsley before serving.
