Ingredients

  • 600 g cod fillet
  • 2 Organic lemons
  • 500 g eggplant
  • 350 g zucchini
  • 2 red bell peppers
  • 3 Garlic cloves
  • 1 bunch Basil
  • 2 tbsp olive oil
  • 1 tbsp herbs de Provence
  • Salt
  • Pepper

Instructions

    Wash, dry, and finely grate the lemon zest. Squeeze the lemons and drizzle over the cod fillets. Cut the fillets into large, bite‑sized pieces.

    Wash, trim, and cube the eggplant and zucchini. Salt the eggplant and let it rest. Wash, halve, seed, remove white membranes from the peppers, and dice them. Peel and finely chop the garlic. Wash the basil and finely chop half of it. Rinse the eggplant and drain well.

    Heat the oil in a pan and sauté the garlic, then add the vegetables and cook for about 5 minutes. Add the fish and simmer on medium heat for another 10 minutes.

    Serve with rice if desired.
