- 600 g cod fillet (ready-to-cook, skinless)
- 1 bunch spring onions
- 100 ml White wine
- 200 ml fish stock
- 1 chili pepper
- 100 ml coconut milk
- light soy sauce
- Cayenne pepper
- Lemon juice
- cilantro (for garnish)

Wash the cod, pat dry and cut into bite-sized pieces. Rinse the spring onions, trim, and slice diagonally into about 2 cm long segments. Warm the white wine with 100 ml fish stock, but do not bring to a boil.

Place the spring onions and fish pieces in the liquid, cover, and gently poach for about 5 minutes. For the sauce, bring the remaining fish stock together with the chopped chili pepper and coconut milk to a simmer.

Season with soy sauce, cayenne pepper, and lemon juice, then whisk until frothy. Remove the fish pieces and spring onions from the broth, drain, and arrange on preheated plates. Pour the sauce over them and garnish with cilantro leaves before serving.
