Ingredients
- 800 g cod or redfish fillets (4 cod)
- Salt
- Pepper (freshly ground)
- 4 ripe tomatoes
- 1 bunch spring onions
- juice of one lemon
- olive oil
Instructions

Wash the tomatoes and cut them into small pieces. Wash, trim, and slice the spring onions into rings. Rinse the fish fillet, pat dry, drizzle with lemon juice, then season with salt and pepper.

Brush four large pieces of aluminum foil with olive oil.

Arrange the vegetables on the foil.

Place the fish fillets on top and cover with the remaining vegetables.

Fold the foil into a sealed packet.

Preheat the oven to 200°C.

Place the foil packet on the oven rack and bake for 20-25 minutes.

Transfer the finished fish from the foil onto a glass baking dish.
