Ingredients

  • 20 shrimp
  • 400 g cod
  • 1 onion
  • 1 Zucchini
  • 60 g mushrooms
  • 1 Garlic clove
  • 1 tsp rosemary (chopped)
  • 100 ml White wine
  • 3 tomatoes
  • olive oil
  • juice of half a lime
  • Salt
  • Cayenne pepper

Instructions

    Clean, devein and wash the shrimp.

    Cut the cod into bite‑sized pieces.

  3. 3.

    Peel the onion and slice it into strips.

  4. 4.

    Wash, trim, quarter lengthwise and slice the zucchini.

  5. 5.

    Clean the mushrooms and halve or quarter them depending on size.

    Peel the garlic and finely chop it.

    Thread the shrimp and fish alternately onto four skewers.

    Whisk 2 tbsp oil with lime juice, a pinch of salt and cayenne pepper, then brush the skewers with this mixture.

    Sauté onion, zucchini, mushrooms and garlic in 2 tbsp hot oil. Add rosemary and deglaze with white wine. Simmer about 2 minutes, season with salt and cayenne pepper, transfer to a heat‑proof baking dish or similar, place the skewers on top, drizzle with a little oil.

    Bake in a preheated oven at 200°C (400°F) under/overheat for about 8–10 minutes until cooked through. Taste and serve.
