- 4 cod fillets
- 2 oranges
- 2 zucchinis
- 1 bundle carrots
- 1 bundle spring onions
- 2 shallots
- 2 tbsp butter
- 125 g heavy cream
- 2 sprigs parsley
- Salt
- Pepper
Instructions

Peel one orange thickly and slice into rounds, juice the other.

Wash fish, pat dry, season with salt, and drizzle with 2 tsp orange juice.

Wash zucchinis, trim ends, cut lengthwise into sticks. Peel carrots, wash, and slice. Trim spring onions, wash, and cut into large pieces. Blanch vegetables in boiling salted water for 4 minutes, remove, shock in ice water, and drain well.

Peel shallots, finely chop, and sauté in butter. Add orange juice and steam the vegetables for 2 minutes.

Place fish fillets on top of the vegetables, cover tightly, and steam the fish for 10 minutes.

Remove fish, keep warm, pour in cream, and let it reduce briefly. Arrange orange slices over the fillets, serve with vegetables and orange sauce, and garnish with parsley leaves.
