Cod with Sauerkraut

Ingredients

  • 4 cod fillets
  • 2 tsp lemon juice
  • 4 tbsp flour
  • 3 tbsp butter
  • 500 g waxy potatoes
  • 4 tbsp butter
  • 1 bunch thyme
  • 400 g sauerkraut
  • 1 onion
  • 20 g clarified butter
  • 1 bay leaf
  • 0.125 l dark grape wine
  • 0.25 l water
  • 0.5 tsp caraway seeds
  • 150 g dark grapes
  • Salt
  • Pepper

Instructions

    Peel, wash potatoes and cover with water; simmer for 20 minutes, then drain. Peel onion and sauté in clarified butter until translucent, add sauerkraut, briefly fry, pour in grape wine and water. Add spices and simmer covered for 20 minutes. Wash grapes, halve them, remove seeds, add to the pot and cook another 10 minutes.

    Wash fish, pat dry, season with salt and pepper, drizzle lemon juice, then coat in flour. Heat butter and brown fish on each side for 5 minutes. In the same pan, whisk thyme leaves into butter, add potatoes and briefly fry everything together. Serve fish with grape sauerkraut, potatoes, and thyme butter.
