Cod Fillet with Peas

Ingredients

  • 400 g Peas (frozen)
  • 2 Spring Onions
  • 0.5 small head lettuce
  • 20 g Coriander (1 bunch)
  • 5 g Butter (1 tsp)
  • 100 ml whipping cream
  • 100 ml Vegetable broth
  • 640 g cod fillet (4 cod fillets)
  • 2 tbsp olive oil
  • 40 g sour cream (2 tbsp)
  • 1 splash Lemon juice
  • Salt
  • Pepper

Instructions

    Let peas thaw. Wash, trim and cut spring onions into ~1 cm pieces. Wash the half head of lettuce, dry and roughly chop. Rinse coriander, shake dry and chop.

    Heat butter in a pan. Sauté spring onions over medium heat for 3 minutes. Add peas and lettuce and sauté for another 3 minutes. Deglaze with cream and broth and simmer for about 4 minutes.

    Meanwhile rinse cod fillets under cold water and pat dry. Heat oil in a pan. Brown the fillets on both sides for ~2 minutes each side until golden brown. Season with salt and pepper.

    Add sour cream and coriander to the peas and season with lemon juice, salt and pepper. Serve peas over the cod fillets.
