Cod with Mushrooms and Soy Sauce

Ingredients

  • 600 g cod fillet
  • 400 g Mushrooms
  • 2 stalks leeks
  • 2 tbsp plant oil
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp Soy sauce
  • 120 ml Vegetable broth
  • 2 tbsp freshly chopped parsley

Instructions

    Rinse the cod, pat dry and cut into bite-sized pieces. Clean the mushrooms and slice them. Wash, trim, and slice the leeks into rings.

    Brown the fish in a non-stick pan with 1-2 tbsp hot oil until golden brown, season with salt and pepper, then remove from the pan. In the same pan sauté the leeks and mushrooms in the remaining oil over medium heat for about 5 minutes. Add soy sauce and broth, season again, return the fish to the pan, cover, and simmer gently for about 10 minutes.
