Cod in Chorizo Coating with Tomatoes, Garlic and Onions

Ingredients
- 4 cod fillets (about 180 g each)
- 100 g chorizo
- 200 g silver onions
- 8 fresh garlic cloves
- 500 g cocktail tomatoes
- 3 tbsp olive oil
- Sea salt
- freshly ground pepper
- 150 ml dry white wine

Preheat the oven to 180°C with fan and top heating.

Wash and pat dry the cod fillets. Slice the chorizo very thin and arrange it in a scalloped pattern over each fillet. Peel the onions and place them with the garlic cloves in a baking dish. Wash the tomatoes and add them on top of the onions. Drizzle everything with olive oil, season with salt and pepper, then lay the fish fillets on top.

Pour the white wine into the dish and bake in the preheated oven for 10–15 minutes until cooked through. Taste the sauce and serve the fish with the vegetables. Garnish with arugula if desired.
