Cod with Mixed Vegetables

Ingredients
- 1000 g cod steak (4 cod steaks)
- 0.5 orange (unprocessed)
- Salt
- pepper (from grinder)
- 2 tbsp olive oil
- 50 ml white wine
- 2 sprigs thyme
- 1 fresh bay leaf
- 500 g red bell pepper caps
- 500 g shallots
- 2 tbsp butter
- 50 ml Vegetable broth
Instructions

Wash the orange and juice it. Wash the fish, pat dry, season with salt and pepper, drizzle with orange juice and let marinate for about 30 minutes.

Wash the herbs and roughly chop some thyme leaves.

Wash, trim, halve, deseed, remove white skin from bell peppers and cut into segments. Peel and halve shallots. In a large pan, sear fish in hot oil until crisp; add vegetables, chopped thyme, and two bay leaves, sauté briefly, then pour in wine and broth. Simmer covered over medium heat for about 5-8 minutes.

Remove bay leaves, season with salt and pepper, garnish with herbs, and arrange on plates with the vegetables.
