Spaghetti with Ground Meat Sauce and Olives

Ingredients

  • 1 small carrot
  • 1 onion
  • 1 Garlic clove
  • 3 tbsp olive oil
  • 200 g mixed ground meat
  • 1 tbsp Tomato Paste
  • 50 ml red wine
  • 100 ml Vegetable broth
  • 0.5 tsp thyme
  • Salt
  • Pepper
  • 150 g diced tomatoes (canned)
  • 500 g spaghetti
  • 100 g green olives (pitted, optionally stuffed)
  • 1 bunch Basil

Instructions

    Peel the carrot and dice it very finely. Peel and finely chop the onion and garlic. Heat the oil, sauté onions and garlic, add carrots and cook briefly. Add ground meat in portions, stir until crumbly under high heat. Add tomato paste, pour in wine and broth. Season with thyme, salt, pepper and stir in diced tomatoes. Simmer for about 30 minutes, stirring occasionally, adding more broth if needed.

    Cook spaghetti according to package instructions in plenty of salted water until al dente.

    Cut olives into pieces. Chop basil. Stir olives and two-thirds of basil into the sauce, season with salt and pepper. Drain noodles briefly and mix with sauce. Plate and sprinkle remaining basil on top. Finish with freshly ground pepper and serve.
