Ingredients
- 4 thick cod fillets (about 200 g)
- Salt
- Pepper (freshly ground)
- 4 slices stale white bread
- 40 g soft butter
- 1 red chili pepper (finely chopped)
- 1 tbsp grated lime zest
- 2 tbsp olive oil (for frying)

Instructions

Drain the bread and pulse it in an electric food processor until fine.

Whisk the butter until fluffy, then fold in the bread crumbs, chili, and lime zest; season with salt and pepper.

Season the cod fillets with salt and pepper. Heat oil in a skillet and sear the fillets for about 2 minutes on each side.

Remove the fish from the pan and place it on a baking sheet lined with aluminum foil.

Spread the crumb mixture over the fish and bake in a preheated oven at 240°C (top rack) for 4–5 minutes, until golden.
