Cod on Vegetable Bed with Pea Dip

Ingredients
- 640 g cod fillet (4 cod fillets)
- 2 carrots
- 2 fennel bulbs
- 4 stalks dill
- 1 tbsp Olive Oil
- 100 ml White wine
- Salt
- Pepper
- 1 Garlic clove
- 200 ml vegetable broth
- 200 g peas (frozen)
- a splash lemon juice
Instructions

Rinse cod fillets under cold water and pat dry. Peel carrots and grate them coarsely.

Wash, trim, and slice fennel into thin strips. Wash dill, shake off excess moisture, and pluck the tips.

Heat oil in a pan. Sauté carrots and fennel over medium heat for 2 minutes. Deglaze with wine. Place cod fillets on top of the vegetables, season with salt and pepper, cover, and simmer gently for about 20 minutes.

Meanwhile, peel garlic. Bring vegetable broth to a boil in a pot. Add peas and garlic; simmer for about 5 minutes. Then puree finely and season with salt and lemon juice.

Plate cod with vegetables on four plates, sprinkle dill on top, and serve the dip alongside.
