Ingredients
- 4 cod fillets (about 160 g)
- 2 Tomatoes
- 2 balls of mozzarella
- 40 g sun-dried tomatoes (in oil)
- 200 ml white wine
- 4 tbsp olive oil
- 1 tsp dried thyme
- 2 Garlic cloves
- Salt
- ground pepper
- parsley for garnish
Instructions

Wash the cod, pat dry and roughly break into pieces.

Wash the tomatoes, remove stems and slice.

Slice the mozzarella as well.

Lay four double layers of parchment paper (about 20x20 cm) in a bowl or deep plate. Place fish on top, then arrange sun-dried tomatoes, tomato and mozzarella slices. Sprinkle chopped garlic and thyme over them. Drizzle white wine and olive oil. Season with salt and pepper, cover with another sheet of paper, fold or tie with kitchen twine.

Bake in preheated oven at 180°C fan for about 20 minutes. Serve garnished with parsley.
