Cod in Vegetable Broth

Ingredients
- 1 onion
- 1 bunch of soup vegetables
- 30 g Butter
- 4 cod fillets (about 160 g each)
- Salt
- Pepper (freshly ground)
- 1 tbsp Lemon Juice
- 200 ml fish stock
- 200 ml white wine
- 20 ml Noilly Prat
- 2 tbsp freshly grated horseradish
- 1 tbsp chopped dill
- 1 tbsp chives sprigs

Peel the onion and cut into rings. Clean, wash and slice the soup vegetables into thin strips.

Wash and pat dry the cod fillets, season with salt and pepper, then drizzle with lemon juice.

Heat butter in a wide pot. Briefly sauté onions and soup vegetables. Add fish stock, white wine and Noilly Prat; bring to a boil. Reduce heat, place the cod fillets in the broth, cover and simmer gently for about 15 minutes (do not overcook).

Stir in 1 tbsp horseradish and season with salt and pepper.

Plate the fish with vegetables and some broth on warmed plates. Sprinkle with dill, chives sprigs and remaining horseradish. Serve with optional boiled potatoes if desired.
