Ingredients
- 200 g basmati rice
- Salt
- 8 large shrimp (prepped except for tail segment, peeled and deveined)
- pepper (ground)
- 2 tbsp rice flour
- 1 Egg white
- 2 tbsp bread crumbs
- 3 tbsp shredded coconut
- peanut oil (for frying)
- garlic sauce (optional)

Cook the rice in double the amount of salted water for about 20 minutes.

Rinse the shrimp and season with salt and pepper. Dust with flour, then coat with beaten egg white. Mix panko crumbs with shredded coconut, dredge the shrimp, and fry in hot oil for 3-4 minutes until golden brown. Drain on paper towels.
