Coconut Milk Rice with Wasabi Strawberries

The tasty coconut milk rice with wasabi strawberries from Spoonsparrow surprises with a gentle spicy kick.

Ingredients

  • 0.5 Vanilla pod
  • 500 ml coconut drink
  • 200 ml coconut milk (9% fat)
  • 200 g round-grain whole grain rice
  • 1 pinch salt
  • 300 g Strawberries
  • 2 tbsp honey
  • 2 tsp wasabi paste
  • 2 stalks lemon balm

Instructions

    Slice the vanilla pod lengthwise and add it with the coconut drink and milk to a pot. Add the rice and a pinch of salt. Stir everything until it boils. Cover the rice and simmer on low heat for about 45 minutes, stirring repeatedly and adding water if needed.

    Meanwhile, clean and wash the strawberries. Puree one third of the strawberries with 1 tbsp honey, slice the rest into rounds.

    Remove the pot from the stove and discard the vanilla pod. Stir in the remaining honey and fold in the strawberry slices.

    Whisk the wasabi paste with 1 tbsp water until smooth. Mix the pureed strawberries with the wasabi and stir into the coconut rice. Wash, dry, and crumble lemon balm leaves, then sprinkle over the rice.
