Strawberry Gooseberry Jam

Ingredients

  • 750 g green gooseberries
  • 500 g strawberries
  • 500 g extra-agar sugar (3:1)
  • 1 packet citric acid

Instructions

    Rinse the gooseberries, drain well and clean. Cut the gooseberries in half. Wash the strawberries, drain and clean them. Depending on size, cut them in halves or quarters.

    Mix the fruit and agar sugar in a large pot. Cover and set aside for about 30 minutes to allow some juice to form.

    Then bring to a vigorous boil over high heat while stirring, and let it bubble vigorously for at least 3 minutes with constant stirring. Stir in the citric acid.

    Fill the jam into jars with twist-off lids until full and seal immediately. Place the jars on the lids for about 5 minutes.
