Ingredients

  • 1 can coconut milk (400 ml)
  • 125 g milk rice
  • 200 g whipping cream
  • 2 tbsp sugar
  • 1 honeydew melon
  • 1 Lime
  • 1 tbsp honey
  • mint (for garnish)
  • coconut chips

Instructions

    Place milk rice with coconut milk in a pot, bring to a boil and simmer gently for about 20 minutes, stirring occasionally. Then turn off the heat, cover the pot and let the rice absorb moisture for another 30 minutes, then cool.

    Halve the melon, remove seeds, cut into wedges and peel the rind.

    Wash the lime hot and pat dry. Peel thin zest strips and slice finely. Squeeze the lime. Mix lime juice, honey and lime strips together. Drizzle over the melon wedges and let sit briefly.

    Whip the cream with sugar until stiff peaks form and fold into the coconut rice.

    Arrange coconut rice with melon wedges on a plate and serve garnished with mint and coconut chips.
