Ingredients
- 300 g wheat flour
- 1 tsp Baking powder
- 100 g ground hazelnuts
- 125 g dried plums
- 1 tbsp cocoa powder
- 150 g liquid honey
- 1 egg
- 1 egg yolk
- 3 tsp gingerbread spice
- 150 g powdered sugar (more if needed)
- 2 tbsp lemon juice
- almond kernels
- candied fruit
- sugar pearls (etc.)

Mix flour with baking powder and fold in hazelnuts. Remove pits from dried plums and puree very finely with a hand blender. Combine plum purée, cocoa powder, honey, egg, yolk, and gingerbread spice with the flour mixture using the dough hooks of an electric hand mixer until a firm dough forms. Cover the dough and let it rest at room temperature overnight.

On the next day roll the dough between two sheets of parchment paper to about 0.5 cm thickness and cut out moons, stars, etc. with cookie cutters. Place on a baking sheet lined with parchment paper. Bake in a preheated oven (180°C fan 160°C) for about 20 minutes, then remove and let cool well.

For decorating mix powdered sugar with lemon juice and a little water until thick. Using a small round tip, decorate the figures as desired or cover them with almonds or other items mentioned above. Let dry thoroughly and store airtight.
