- 3 egg whites
- 280 g sugar
- 350 g shredded coconut
- 1 Organic Orange
- 50 g chopped pistachio nuts

Beat the egg whites until stiff peaks form. Gradually sift in the sugar while whisking, continuing to beat until the mixture glows and holds firm peaks.

Carefully fold in the shredded coconut and zest of the orange with a spoon.

Preheat the oven to 160 °C. Using two spoons, drop cherry‑sized mounds of the batter onto parchment paper on a baking sheet. Decorate with pistachios. Bake for 10 minutes, then allow to cool on wire racks.
