Coconut Balls with Chocolate Filling

- 100 g sticky rice flour
- 5 tbsp coconut milk
- 3 tsp palm sugar
- oil for frying
- 12 dark chocolate pieces
- coconut flakes for coating

For the mango sauce, peel the mango, cut the flesh from the pit and dice. Boil the mango juice with the sugar. Whisk the starch into lime juice until smooth, add to the sauce and let thicken slightly. Remove from heat, stir in the mango cubes and cool.

Combine sticky rice flour with coconut milk and palm sugar. Gradually add water (about 2-3 tbsp) and knead well. The dough should be only slightly tacky. Add more water or flour if necessary.

Heat oil for frying to about 170°C. Shape the dough into a log, cut into 12 equal pieces. Flatten each piece, insert a chocolate square, roll into small balls. Roll the balls in coconut flakes until fully coated. Fry in hot oil, turning occasionally, until golden brown. Drain on paper towels and serve with mango sauce.
