Ingredients

  • soft butter (for the pan)
  • soft breadcrumbs (for the pan)
  • 1 untreated lemon
  • 1 untreated orange
  • 150 g pistachio nuts
  • 250 g flour
  • 1 tsp Baking powder
  • 250 g butter
  • 5 eggs
  • 225 g sugar
  • 0.5 tsp Fleur de sel

Instructions

    Preheat the oven to 160°C fan. Grease the loaf pan with butter and dust with breadcrumbs.

    Wash the lemon and orange hot, pat dry. Grate the lemon zest and squeeze its juice. Blend both with 2-3 tbsp pistachios into a fine puree. Chop the remaining pistachios and mix with flour and baking powder in a bowl. Cut the butter into pieces and melt in a small pot. Remove from heat and let cool. Beat the eggs with sugar until frothy. Fold in the pistachio puree. Then alternately stir in the melted butter and the flour mixture into the egg batter until a smooth dough forms. Pour into the pan and level.

    Grate the orange zest, mix with salt, and sprinkle over the dough. Bake for about 50 minutes until golden brown (test with a skewer).

    Remove the cake from the oven, let rest a few minutes, then transfer to a cooling rack to cool completely.
