The Cloud Bread from Spoonsparrow is a fluffy flatbread that should not be missing in any low-carb kitchen!
Ingredients
- 3 eggs (medium size)
- 100 g lactose-free double cream fresh cheese
- 1 tsp Baking powder
- a pinch of salt
Instructions

Separate the eggs and whisk the yolks with the fresh cheese.

Add the baking powder and mix thoroughly again.

Whisk the egg whites with a pinch of salt until stiff, then fold them into the egg‑cheese mixture in portions for the Cloud Bread.

Place about six to eight round discs on a parchment‑lined tray and bake in a preheated oven at 150 °C (convection: 130 °C; gas: level 1–2) for about 20–25 minutes, depending on desired browning. If desired, sprinkle the finished Cloud Bread with herbs such as rosemary.
