Crispy Buttermilk Bread

The crispy buttermilk bread from Spoonsparrow is quick to prepare and always tastes great!

Ingredients

  • 100 g nut granola
  • 250 ml buttermilk
  • 300 g wheat flour type 1050
  • 150 g whole grain semolina
  • 1 packet Weinstein baking powder
  • a pinch of nutmeg
  • 600 g bananas (4 small, ripe)
  • 0.5 lime
  • 80 g honey

Instructions

    Stir the granola and buttermilk in a bowl and let it soak for about 10 minutes.

    Meanwhile, mix the flour, semolina and baking powder in another bowl, adding a pinch of nutmeg directly.

    Peel the bananas and mash them with a fork.

  4. 4.

    Squeeze half a lime to get its juice.

  5. 5.

    Add the banana mash, honey, 1 tablespoon lime juice and the granola-buttermilk mixture to the dry mix. Knead everything into a moist dough using the hand mixer’s dough hooks.

    Transfer the dough to a loaf pan lined with parchment paper (30 cm long) and bake on the oven rack in a preheated oven at 200 °C (fan: 180 °C, gas: level 3) for about 40 minutes.
