Clementine Liqueur

Ingredients
- 500 g untreated Clementines
- 250 g sugar
- 1 vanilla pod
- 1 tsp coffee powder
- 0.7 l vodka

Wash the clementines hot, dry thoroughly and cut the peel as thin as possible (without the white pith). Separate the peels into narrow strips and put them in a bowl. Remove the white pith from the fruit and divide the fruit into individual segments. Add the peels and sprinkle with sugar. Split the vanilla pod lengthwise and scrape out the seeds. Add the vanilla seeds and coffee to the clementines. Press everything together with a pestle and leave it until the sugar dissolves, stirring occasionally.

Transfer the mixture to an appropriately sized vessel, pour in the vodka and seal. Let the infusion steep dark and not too cool for about 2 months, shaking vigorously from time to time. Strain the liqueur through a muslin‑lined sieve and fill prepared bottles.

Serve on ice cubes garnished with clementine slices and mint as desired.
