Ingredients
- 1 bundle of mirepoix
- 1 onion
- 2 Garlic cloves
- 400 g Broccoli
- 1 tbsp Olive Oil
- Salt
- Pepper
- 1.2 l Vegetable broth
- 75 g lentils
- thyme (1 tbsp, fresh chopped)
- oregano (1 tbsp, fresh chopped)
- 50 g pasta noodles
- 2 Tomatoes
- Basil
- 30 g Parmesan

Wash and trim the mirepoix, cut into small pieces. Peel and finely chop onion and garlic. Wash and trim broccoli, divide into small florets. Peel and finely slice broccoli stems.

Heat oil in a pot, briefly sauté onion and garlic, add mirepoix and cook for 3 minutes. Season with salt and pepper, pour in broth. Add lentils and herbs, simmer gently for 20 minutes. Then add broccoli and pasta to the soup, bring to boil and cook another 5 minutes until al dente.

Wash tomatoes, chop finely and stir in. Taste the minestrone and serve sprinkled with basil and parmesan.
