Ingredients

  • 200 g waxy potatoes
  • 200 g carrots
  • 150 g kohlrabi
  • 150 g Knollensellerie
  • 200 g savoy cabbage
  • 1 onion
  • 2 tbsp butter
  • 2 tbsp flour
  • 1 l vegetable broth
  • Salt
  • Pepper (freshly ground)
  • 300 g smoked herring

Instructions

    Peel, wash and cut the potatoes, carrots, celery, and kohlrabi into bite‑sized pieces. Wash the cabbage, remove the leaves, discard tough leaf tips, and slice the remaining leaves into strips. Peel and finely chop the onion; sauté in a pot with 2 tbsp butter until translucent. Add the remaining vegetables, cook briefly, dust with flour, then pour in the broth. Season with salt and pepper and simmer over medium heat for about 15 minutes.

    Taste and plate the soup. Roughly break the herring into pieces and serve alongside the soup.
