- 2 chicory (red and yellow)
- 1 grapefruit
- 1 tsp medium-hot mustard
- 1 tbsp white balsamic vinegar
- 5 tbsp olive oil
- 1 tsp mixed herbs
- 2 tsp Honey
- Salt
- Pepper (freshly ground)
- 80 g smoked meat (sliced)

Wash, clean, and cut the salads into bite-sized pieces as desired. Peel the grapefruit all around, removing all white membranes. Then cut the fruit flesh between the segments and catch the juice in a bowl. Whisk together mustard, vinegar, oil, herbs, honey, salt, and pepper to make a dressing and taste. Arrange the leafy greens with grapefruit slices decoratively in a bowl. Top with smoked meat and serve with the dressing.
