Cinnamon Parfait with Warm Blackberries

Ingredients

  • 250 g whipping cream
  • 2 Cinnamon sticks
  • 2 tbsp liquid honey
  • 100 g plain yogurt
  • 2 egg yolks
  • 0.5 tsp cinnamon
  • 1 tbsp almond flakes (for garnish)
  • 1 tbsp chopped pistachios (for garnish)
  • 100 g Blackberries
  • 100 g sour cherries
  • 250 ml cherry juice
  • Sugar (as needed)
  • 0.5 tsp cornstarch

Instructions

    Heat cream with cinnamon sticks, let steep and cool, then remove the cinnamon sticks and chill the cream well.

    Whisk egg yolks with honey and ground cinnamon over a hot water bath until frothy, then fold in yogurt.

    Beat the cream stiff and fold it in.

    Pour mixture into a small square dish, smooth top, cover with plastic wrap and chill in freezer for about 3–4 hours until firm.

    Pit cherries and simmer them in cherry juice. Whisk cornstarch with a little water to make a thick slurry, then use it to thicken the cherry liquid.

    Sweeten to taste and gently fold in blackberries.

    Spread the fruit mixture onto a plate. Pour the parfait from the dish, slice into rounds and arrange on top of the blackberries. Sprinkle with almonds and pistachios and serve.
