Christmas Yeast Men

Ingredients
- 1 cube yeast (42 g)
- 50 g sugar
- 550 ml lukewarm milk
- 1 kg flour
- 1 tsp salt
- 1 egg
- 150 g butter
- flour (for working)
- 1 egg yolk
- 2 Tbsp whipping cream
- raisins (for decoration)
- sugar (for dusting)

Stir the yeast with sugar into the milk and let stand for about 10 minutes. Meanwhile mix flour and salt in a bowl, beat in the egg, add butter in small pieces. Pour the yeast‑milk mixture in and knead everything into a smooth, elastic dough. The dough should separate from the bowl edges; if needed add more flour or milk to reach proper consistency. Return to the bowl, cover with a cloth and let rest at a warm place for about 2 hours.

Preheat the oven to 180 °C fan. Line two baking trays with parchment paper. Divide the dough into 10–15 portions. From each take about one‑quarter of dough and shape a round head. Form the body from the remaining dough and place the men on the trays. Give each a mouth and press two raisins for eyes. Whisk the egg yolk with cream and brush the men. Dust with sugar and bake 20–30 minutes, depending on size.
