Ingredients

  • 2 onions
  • 400 g celery
  • 1 stalk leek
  • 2 carrots
  • 4 egg whites
  • 300 g Ground Beef
  • 1 handful ice cubes
  • 2 parsley
  • 1 stalk lovage
  • 1 tsp peppercorns
  • 4 juniper berries
  • 4 allspice berries
  • 1 l beef broth
  • Salt
  • chopped chives (for garnish)

Instructions

    Peel or clean the onions, 300 g celery, leek and carrots and finely dice them. Mix the egg whites, ground beef, ice cubes, parsley, lovage, pepper, juniper and allspice well together and combine in a pot with cold broth. Bring to a slow simmer while stirring occasionally. Then stop stirring and let the broth steep over low heat for about 30 minutes until the meat cake settles at the bottom.

    Carefully strain the broth through a cloth. Slice the remaining celery into thin rounds and cut out star shapes. Blanch these briefly in hot salted water, shock them, then drain. Arrange on bowls or plates. Bring the broth to a boil, season with salt, and pour into the bowls. Sprinkle with chives before serving.
