Avocado Lime Soup

A refreshing soup featuring ripe avocado and zesty lime, perfect for a light meal.

Ingredients

  • 1 onion
  • 3 ripe avocados
  • 1 Organic Lime
  • 2 stalks coriander
  • 1 tbsp Olive Oil
  • 600 ml Vegetable Broth
  • Salt
  • Pepper
  • Cayenne pepper
  • chili flakes

Instructions

    Peel and finely chop the onion. Halve the avocados, remove pits, peel, and cut into cubes.

    Wash the lime under hot water, pat dry. Zest with a zester, halve, and juice. Rinse coriander, shake dry, pluck leaves, and finely chop half of them.

    Heat oil in a pot. Sauté onion over medium heat until translucent. Add avocado cubes, cook 1–2 minutes, then pour in lime juice and broth.

    Blend soup until smooth. Season with salt, pepper, cayenne pepper, and chopped coriander. Divide into four bowls. Garnish with chili flakes, lime zest, and remaining coriander.
