Fiery Apple Sweet Potato Soup

- 1 onion
- 600 g Sweet Potatoes
- 1 red chili pepper
- 2 tbsp olive oil
- 1 l vegetable broth
- Salt
- black pepper (freshly ground)
- 2 red apples
- 1 tbsp Lemon Juice
- 1 sprig mint

Peel the onions and sweet potatoes, wash the potatoes, and dice both into small cubes. Wash the chili, halve it lengthwise, remove seeds, and finely chop. In a pot heat the oil and sauté the onion with the chili and sweet potatoes. Add the broth, season with salt and pepper, and simmer over medium heat for 20-25 minutes.

Meanwhile wash the apples, quarter them, remove the core, and slice into thin strips or shave. Mix with lemon juice. Rinse the mint, shake dry, and cut the leaves into fine ribbons.

Puree the soup with an immersion blender until smooth, taste and adjust seasoning if needed, then fold in the apple strips and mint ribbons. Let it rest for about 5 minutes before serving in bowls.
