Ingredients

  • 350 g veal
  • 350 g pork tenderloin
  • 350 g Chicken breast fillet
  • 150 g fresh bacon
  • 2 tsp salt
  • 0.5 tsp dried green peppercorns
  • 1 tsp thyme
  • 1 tsp Oregano
  • 2 Garlic cloves
  • 0.5 lemon zest
  • Salt
  • ground black pepper
  • 20 ml Armagnac
  • 2 packs puff pastry (frozen, approx. 450 g)
  • 1 egg yolk
  • 1 tbsp whipping cream (for brushing)

Instructions

    Let the puff pastry thaw side by side.

    Cut the meats into small cubes. Process bacon and half of the meat through a fine grinder. Mix salt with crushed spices and minced garlic. Combine ground meat, bacon, and cubed meat with Armagnac, sprinkle with spice mix, grate lemon zest over it, and mix well.
